Summer Bounty

Even though early August can feel like the most miserable time of the whole summer - they're not called the dog days for nothing, you know - there's one reason to smile right about now: fresh produce.

I'm not the only one who's going crazy over the tumbling mountains of tomatoes and neatly stacked rows of zucchini and the wooden boxes of eggplants.  The blogs are waxing lyrical and the farmers' markets are packed to bursting; even the countrywide drought can't put a damper on our spirits.

This is the time of year when you don't even really need recipes if you're cooking with the freshest ingredients.  Everything is just begging to be eaten in the simplest way possible.  So, on Saturday night, we sat down to a delicious family dinner on the porch, one that took 20 minutes to prepare.

We drizzled cherry tomatoes and zucchini with some olive oil and salt, then threw them on the grill. Once they were charred, we tossed them together in a big bowl of angel hair pasta splashed with a bit more olive oil and added chopped black olives, crumbled feta, and lemon thyme picked straight from the garden.  At the same time, we marinated cubes of lamb in pesto and then grilled them, too.  It was a perfect meal - quick and fresh and healthy and bursting with summer flavors.

I hope you had a lovely weekend also, dear readers, full of delicious food and good company!  Onward and upward to the week ahead.

  1. that sounds absolutely amazing (minus the olives, but that is my own deal). beautiful pictures as well, girl.

  2. I have so much zucchini and eggplant coming out of the garden that I eat one or the other everyday and I spend ages searching for different recipes so I don't tire of them. I am becoming a zucchini aficionado :)

  3. I can't make anything with cherry tomatoes - you see, they are growing in my garden and every time I water them I pluck off the ripe ones and eat them on the spot!

  4. Ooooh, pictures of glorious yumyum.. MY favourite thing!

And what a 'nice' Blog to have found via 'Smitten by Britain' .. I am an 8 year old African Grey Parrot called GeeGee, like the gee in gee whizz, NOT the French GiGi. I live in deepest Knightsbridge and post on MY Blog almost every day.. MY HER is the typist.. Parrot's 'fingers' do not work well with iPads.

Betsy, your wedding 'bash' place looks SO beautiful.. SHE and I hope you all have a glorious day.

By the way.. grey is very chic.. so you done good gurl to get that morning suit for 'him outside' to be to wear on your special day.

I hope that you will come and visit MY Blog.. Parrot Tales by GeeGee.. heehee.. then you too can be as dotty as WE are..

With best wishes and congratulations for a good read. GeeGee Parrot. August 9th, 2012.
